Special display cases have been studied in which the cold produced is
proportional to the quantity of gelato displayed and the temperature
remains homogeneous thanks to a sophisticated ventilation system.
The inclination and height of the gelato tubs, shape of the glass and
automatic defrost heighten the taste of one of the most appetizing and
inviting food products, enjoyed by both children and adults in every
season.
As soon as it's produced the artisan gelato must be brought quickly to
the hardening and storage temperature in the appropriate fridge, in
order to prevent the loose water still present in the gelato from
forming big ice crystals that ruin the consistency and palatability. It
will therefore be kept in a storage compartment, which has the double
function of knocking down the temperature and conserving the gelato.

two-speed Tru-2 machines, designed for ultimate performance and
flexibility in making the widest range of products.

PastoChef

PASTOCHEF RTX machines blend, cook, heat, cool, age and preserve over

chocolate tempering for the production of assorted filled chocolates,
confection of cakes, almonds, fruit jellies, ice-cream mix and shakes,

Whipped Topping

Kwik Whipper models work perfectly with both heavy cream and
vegetable-based products. They are also flavor-flexible, and capable of
producing superior quality mousse and spumone.
Agemaster

Our third generation mixing and aging vats feature the same
technological advances found in our industry leading Pastomaster RTX
units. These new machines preserve and age frozen dessert mixes,
protecting them from any bacteriological contamination. They are also
the ideal solution for preparing cold base mix.
